Healthy Living, Simple Living

If you've decided to make organic, healthful food a priority, there are a variety of ways to do it without going totally broke. Shopping for local produce that is in season really helps. Orchard Nutrition has comparably good prices on produce. Also, local produce delivery service, Country Organics, is opening a market! They will be open Wednesday through Saturday, from 9:30 to 1:30, at 915 Merchant Street.
A good way to maximize nutrition from nuts, beans and grains is to soak and/or sprout them. Soak beans overnight with a tablespoon of cider vinegar, and grains overnight with a tablespoon of whey or buttermilk. The result is better assimilation of nutrients and less digestive side effects.
Here is a basic recipe for crispy nuts. In Chinese medicine, walnuts are especially good for the kidney system, and for symptoms such as lower back pain, physical and mental fatigue, poor memory, and low adrenals.


Crispy Nuts
Ingredients:
Your choice of raw, non-irradiated nuts
filtered water

Directions:
Soak the nuts overnight in the water.
The following day, drain and rinse the nuts. Then continue to rinse daily for 3 days, or until small sprouts appear.
You may eat them like this, or dry them in an oven set at 200F, for 2-10 hours, to taste.
They are delicious.
